This amazing selection of Boquete traditionals is dominated by the Typica and Catuai varietals- we call it our “Typicatuai.” After being meticulously harvested at peak ripeness and de-pulped by hand that same evening, the bean is naturally fermented in small tanks for 24 to 48 hours. The beans are then carefully washed by hand and laid to dry naturally in the sun for an average of 7 days on African beds bringing the moisture content into the 10% range. Finally, the beans are aged in the parchment for a minimum of three months. When an order is placed, the coffee is milled separating the bean from the parchment, or “pergamino”, then further sorted by machine for size and density, and finally passed through a rigorous hand selection. The result is a fresh bright cup with a bold yet structured body and a balanced citrus acidity smoothed by a mild, pleasant chocolatiness. Grown on our Windy Ridge farm at an elevation of 1500 mts. Longboard Pache Misty Mountain Reserve Washed The high elevation, virgin soil and unique microclimate of our Misty Mountain farm affords ideal conditions for this lesser known varietal to express its treasures. The result is a clean balanced cup overflowing with fruity yet non-citrus acidity and strong notes of strawberry forward and cacao toward the back of the palate. After being hand picked at peak ripeness and de-pulped by hand that same evening, this coffee is fermented naturally for an average of 2 days, sun dried on African beds for an average of 7 days, and allowed to rest in parchment for a minimum of 3 months. Hacienda Fennario Wild Grown We have been producing this wonderful, approachable, organic coffee for fifteen years on our original coffee farm, Fennario. The supply is limited, and a devout following of Fennario drinkers has developed who will drink nothing else. The varietals that produce this balanced and consistent cup, Caturra and Catuai, are classic Boquete traditionals.
We call it “Wild Grown” because our method goes beyond organic as we refrain from applying even “organic” pesticides and fungicides, and utilize intense pruning and organic fertilizer to manage the crop. Keeping the soil healthy is key, and allowing the plant to “fend for itself” a bit more results in a higher caffeine content and an intense, mineral flavor and smooth, structured body highlighted by strong chocolate notes and hints of cedar and macadamia nuts.
